Creamy Chicken Enchiladas


These are super yummy! Especially with Salsa, Sour Cream, and Guacamole!

Ingredients:

1 pkg. cream cheese, softened
2 Tbsp. water
2 tsp. onion powder
2 tsp. ground cumin
1/2 tsp. salt
1/4 tsp. pepper
5 c. diced, cooked chicken
20- 6" flour tortillas
2 cans (10 3/4 oz. each) cream of chicken soup
2 c. sour cream
1 c. milk
2 cans (4 oz) chopped green chilies
2 c. shredded cheddar cheese

Directions:

beat cream cheese, water, onion powder, cumin, salt and pepper until smooth. stir in chicken. Place 1/4 c. down the center of each tortilla. Roll up and place seam side down in 2 greased pans. Combine soup, sour cream, milk and chilies. Pour over enchiladas and bake at 350 for 30 minutes, uncovered. Sprinkle with cheese and bake 5 minutes more.

Sloppy Joes


Ingredients:

2 lbs. ground beef
1 large onion, chopped
1 1/4 c. ketchup
1/2 c. water
1 Tbsp. brown sugar
1 Tbsp. white vinegar
1/2 tsp. salt
1/2 tsp. ground mustard
1/2 tsp. chili powder
1/4 tsp. ground allspice

Directions:

Cook beef and onion in a small amount of olive oil until meat is done. Add ketchup, water, brown sugar, vinegar, salt, mustard, chili powder and all spice. Bring to a boil, then simmer for 15 minutes.

Peanut Butter Chocolate Cookie's

These turned out really well! and they were super tastey!

Ingredients:

1/2 cup (1 stick) butter, softened
1/2 cup chunky or smooth peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar, firmly packed
1 egg
1 1/4 cups all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 cup semisweet(Regular work great too!) chocolate chips

Cream the butter, peanut butter and sugars until light. Add the egg and mix until fluffy.Make sure you combine well.

Blend the flour, baking powder, soda and salt together well. Add these dry ingredients to the butter mixture. Add the chocolate chips.

Drop cookie dough by teaspoonfuls onto lightly greased baking sheets. Bake for 10-12 minutes at 375°.

Spaetzle


This is one of my most favorite German Foods!
it always tasted just so good!!
Any way you will have to try it one day.

2 c. flour
4 eggs
1/3 c. milk
2 tsp. salt
butter
sliced onions

Stir flour, eggs, milk and salt. The batter will be sticky. Put dough into spaetzle press and press until small noodles form. Cook until they float. You can also use a colander and press the dough through with a wooden spoon. I've never tried that so I don't know if it works. Coat it with cooking spray first. Melt butter in a pan and saute the onions. Serve over spaetzle.And you can also pour gravy over it, but my mom just cant make gravy so that is why it is not on there.

Farfalle with Creamy Mushroom Gorgonzola Sauce


this is one pasta that my mom loves!! She made it a long time ago but we all still remember it!!

2 Tbsp. butter
3 Tbsp. flour
2 1/2 c. milk
5 oz. gorgonzola
3 Tbsp. olive oil
1 lb. assorted mushrooms, sliced
3/4 c. frozen peas, thawed
1 lb. farfalle pasta

Melt butter over medium heat, then add flour and whisk until smooth. Allow to cook 1-2 minutes. Add milk and whisk until smooth. bring to a simmer and simmer for 2 minutes, stirring constantly. Remove from heat and stir in crumbled gorgonzola. Add salt and pepper to taste.
Heat oil over medium heat and add mushrooms. Saute 12 min. stir in peas. Season with salt and pepper.
Cook pasta. Combine with gorgonzola sauce and mushrooms.

Chedder Bruschetta


was accualy good!! Even Amy really liked it!!:) well every thing but but tomatoes! lol

24 slices french bread
2 medium tomatoes, seeded and chopped
2/3 c. shredded cheddar cheese
1/3 c. mayo
1/4 c. grated parmesan
1 tsp. dried oregano
1/2 tsp. dried basil
1/2 tsp. pepper
toast bread slices in a 350 degree oven for 5 minutes on each side. Combine remaining ingredients and spread over toasted bread. bake 8-10 minutes longer.

Carrot Cake Pancakes!


these were soooo frecken good!!! I fyou like carrot cake or even if you dont, you will aboslutly love these!! so Here is the recipe so you can get started!...

1 1/4 cups all-purpose flour
2 tablespoons finely chopped pecans
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground ginger
Dash nutmeg
1 egg, lightly beaten
1/3 cup packed brown or granulated sugar
1 cup milk
2 cups finely grated carrots
1 teaspoon vanilla extract

Cream Cheese Spread

4 ounces cream cheese
1/4 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
1 dash ground cinnamon
In a bowl, combine flour, pecans, baking powder, cinnamon, salt, ginger, and nutmeg.

In a separate bowl, combine egg, brown sugar, milk, carrots, and vanilla; mix well.

Stir carrot mixture into dry ingredients until moistened. Pour batter by 1/4 cupful onto a greased hot griddle. Turn when bubbles form on the top of pancake; flip and cook until golden brown.

For topping, blend cream cheese, powdered sugar, milk, and vanilla until smooth. Sprinkle with cinnamon, and serve with pancakes.

Barefoot Contessa's Oven Fried Chicken



This chicken is the first fried chicken that my mom has not ruined! And she has tried other recipes many times but they never turn out. But this was good and it worked!!! It was amazing!!!!!!! It makes 6 fried chicken wings or legs. But even if you aren't good at fring you can still do this!

2 chickens (3 pounds each), cut in 8 serving pieces
1 quart buttermilk
2 cups all-purpose flour
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
Vegetable oil or vegetable shortening



Place the chicken pieces in a large bowl and pour the buttermilk over them. Cover with plastic wrap and refrigerate overnight.

Preheat the oven to 350 degrees F.

Combine the flour, salt, and pepper in a large bowl. Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture. Pour the oil into a large heavy-bottomed stockpot to a depth of 1-inch and heat to 360 degrees F on a thermometer.

Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven). Don't crowd the pieces. Remove the chicken from the oil and place each piece on a metal baking rack set on a sheet pan. Allow the oil to return to 360 degrees F before frying the next batch. When all the chicken is fried, bake for 30 to 40 minutes, until the chicken is no longer pink inside. Serve hot.And eat well!!!:)

8 Mintue Ice Cream

This is really good Ice Cream! Every one in my family liked it. And you don't even have to have an ice cream maker is the good part! And who said that if you don't have an ice cream maker you cant have home made ice cream?!?! So here is the recipe............................

1 cup milk

3 tablespoons sugar

1 teaspoon vanilla

6 tablespoons salt

3-4 cups of ice

1 pint plastic bag that zips shut

1 gallon plastic bag that zips shut

Mix the milk, sugar, and vanilla in a small bowl. Pour the mixture carefully into the small bag and seal tightly. Place The salt and ice in the pint bag. Push out some of the air then seal tightly. Place the pint bag in the gallon bag, again push out some of the air, and seal tightly. Shake the bag for five minutes. If your hands get cold put a pair of gloves or a towel on your hands. Take out the ice cream and put it in your bowl and eat immediately! for more flavor you can add 2 small dashes of Cinnamon.

Pistachio Trifle

This is a Delicious dessert that my family has a lot, because it is soooooooooo good! so u will see us post lots of different flavors of it!!!!! It is a perfect dessert to have when ever you want................................


1 yellow cake mix, prepared according to package directions

1/2 cup cream

2 small packages instant Pistachio pudding, prepared

1 container cool whip

1 pkg. toffee bits

Cut the cake into bite sized squares. Put some of the yellow cake in and then some pisachio pudding next some cool whip after the cool whip goes the toffee bits. Repeat those instructions until your bowl is filled. How easy is that?!?! oh and one more thing enjoy!
